Organic Minty Cheese, Leek and Potato Bake

Preheat the oven to 190c / 375f / GM5

Mix together the leeks, potatoes and mint and season well. Place the mixture in a 1 1/2 litre casserole dish.

Place the cream cheese in a bowl and slowly stir in the water. Pour this over the vegetable mix, cover and bake for 45 minutes. Remove from the oven, stir the mixture, then return and cook uncovered for a further 30-45 minutes, until the potato is tender.

Serves 4 as main course or 6-8 as a side dish
